Baked chicken breasts, veggie pene pasta, and steamed snow peas! Quick, easy, low calorie and gluten free! Yummy too!!

Ingredients:

1 tbsp smoked paprika

1 tbsp Italian seasoning

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1 tsp black pepper

1/4 tsp red pepper flakes

Chicken breasts – boneless skinless

2 tbsp olive oil

2 tbsp butter cut into 4 pieces

Directions:

Preheat oven to 450

Mix all dry ingredients together in small bowl

Pour 1 tbsp oil in bottom of baking dish

Pat chicken breasts dry with paper towel

Put chicken breasts in pan and pour rest of oil on breasts evenly

Put half of the dry run on each side of the chicken breasts

Put piece of butter on top of chicken breasts

Cook for 30 minutes

Let cool for 5 minutes (or while fixing sides) before serving

I served uncle ben’s ready to eat rice to my mother and husband and had the veggie pene pasta for myself. Then also had market fresh snow peas for another side. Each of these sides I just popped into the microwave for a couple of minutes each and then put them into bowls to serve.

The chicken was spicy! But very good! The breasts I bought were really big so my mom and I split one and we had one left over. There was enough leftovers from tonight that Steve and I will have a nice lunch tomorrow!

Total calories for the entire meal is 315. Total price for all 5 meals (including the 2 for tomorrow) is $15. That’s $3 per meal! Healthy, yummy, and inexpensive! And I use Walmart grocery pickup to grocery shop! Seriously don’t let people tell you it’s expensive to eat healthy! McDonald’s doesn’t feed you like this for this price!
